Mix 150g cake flour (200 g) with salt (1/2 tsp) and oil (1 tbsp), add boiling water (125 ml) and stir with a spoon (dough is hot).
Turn out onto worktop dusted with flour (30 g); add more flour (200 g) if sticky and knead 5 min until soft and pliable. Cover and rest 5 min.
Heat pan low (turn to high just before cooking). Melt butter or ghee (1 tbsp).
Roll a ~8cm piece into a large circle, spread with melted butter/ghee (1 tbsp), roll up Swiss-roll style, then cut into even pieces.
Stand a piece upright, press flat, dust with flour (30 g) and roll into a thin flat disc.
Cook on hot pan ~1 min total: turn after 5–10 sec, cook longer on second side pressing edges; turn when it bubbles/rises, cook to golden-brown spots. Repeat and keep covered with cloth to stay soft.
